My favorite ironic quote in Hamlet occurs in the nunnery scene with Ophelia. It is the part that in which Hamlet is in reference towards her father,"Let the doors be shut upon him, that he may play the fool nowhere but in's own house" (3.2.136). I found it ironic because we all know Hamlet kills the "fool" which is Polonius. It is ironic because Polonius began to snoop and got died due to that reason.
